Instructions:

1. Add the flour and most of the milk to the mixer bowl. Mix until combined, then rest 20–30 minutes for autolyse. 2. Mix the yeast, dry milk, honey, and remaining milk together. 3. Add the yeast mixture to the dough and mix until the dough starts coming together. 4. Add the salt and mix briefly. 5. Add the butter and knead until the dough is smooth, elastic, and slightly tacky. 6. Cover and bulk ferment until doubled. 7. Gently degas the dough and divide into 2 equal pieces, about 930 g each. 8. Pre-shape each piece, rest 10–15 minutes, then shape into logs. 9. Place into greased 9.5 x 5 loaf pans. 10. Final proof until the dough rises above the rim of the pan. 11. Bake at 365°F for 30–35 minutes. 12. Brush with a small amount of butter for shine and softness of crust 13.
